This engaging course will equip you with the knowledge and skills to handle food safely and meet your obligations under Canada's food safety framework — from CFIA and Health Canada at the federal level, to provincial legislation like Ontario's Health Protection and Promotion Act, to municipal inspection and disclosure programs. Food safety is a shared responsibility. Employers must ensure every food handler is properly trained and certified, maintain a functioning food safety management system, and comply with the food safety requirements of their federal, provincial, and municipal authorities. Employees, in turn, are expected to apply safe food handling practices consistently on the job, monitor time and temperature controls, follow proper hygiene and illness-reporting procedures, and know when to escalate a food safety concern before it becomes a health risk.

Module 1: Canadian Food Safety Legislation & Regulatory Authorities

Understand the three tiers of food safety regulation in Canada — federal (CFIA and Health Canada), provincial and territorial (such as Ontario's Health Protection and Promotion Act and Regulation 493/17), and municipal (including public health inspection and disclosure programs) — and how they work together to protect the public.

Module 2: Food-Borne Illnesses: Risks, Symptoms, and Impacts

Learn to distinguish food intoxication from food infection, recognize the symptoms of common food-borne pathogens, and understand the outbreak-reporting obligations that apply when illness is suspected.

Module 3: Food Contamination: Microbial, Chemical, and Physical Hazards

Identify the microbial, chemical, and physical hazards that can contaminate food, and the points in handling where each type of contamination is most likely to occur.

Module 4: Food Allergen Management & CFIA Recalls

Learn how to prevent cross-contact with priority food allergens, communicate allergen information accurately, and understand how CFIA food recalls work.

Module 5: Basic Microbiology & Pathogen Growth Factors

Understand the FATTOM factors that allow food-borne pathogens to grow, and why controlling these factors is the foundation of every food safety practice that follows.

Module 6: Food Safety Management Systems: HACCP Principles

Learn the core principles of Hazard Analysis and Critical Control Points (HACCP) and how to identify and monitor critical control points in a food operation

Module 7: Temperature & Time Controls

Master the temperature danger zone, safe hot-holding, cold-holding, and cooking temperatures, and the two-stage cooling process required to move food safely out of the danger zone.

Module 8: Safe Cooling, Receiving, and Storage Protocols

Learn proper receiving and rejection criteria, First In, First Out (FIFO) stock rotation, correct storage order to prevent cross-contamination, and the routine checks required for buffet and display food.

Module 9: Cleaning, Sanitization, and Pest Control

Learn the proper three-sink and two-sink sanitizing methods, the requirements for mechanical and chemical dishwashers, and the integrated pest management practices that keep food premises compliant.

Module 10: Personal Hygiene and Employee Illness Management

Learn correct handwashing technique, proper hygiene practices for food handlers, and the illness-reporting and return-to-work requirements that protect both staff and the public.

Module 11: Final Assessment

After you complete all ten core modules, a final online exam with 50 questions tests your knowledge across the full course. A 70% passing grade is required to complete the course. You will have 60 minutes to complete the assessment. The final assessment will be proctored. This means a picture of you and a valid government ID will be taken.

How it works

The course is fully self-paced, so you can start, stop, and pick up again on your own schedule, with voice-narrated lessons and interactive checkpoints to confirm you've absorbed each section before moving on. Final exam results are reviewed by a proctor, and you'll receive your results and certificate within 24–48 hours of that review.
